


not sure if it's bc i've gotten rusty (havent made a cake since last summer), but i had a doozy of a time with this one...every one of the flags shattered at some point during the month of making each detail. colors were a bit off, making the fondant proved to be harder than it should have been, the icings were too soft, and the filling flopped on me and had to be remade. i also never had a problem with the cakes breaking, but i did when baking these cakes. both the royal icing carriage and the chocolate unicorn had to be made twice because of size and consistency issues. so many problems. what the...?!?!
in the end, it came together, but there's a lopsidedness about it that i am not pleased about. considering the circumstances (mimi bugged me thru out the entire making of this cake), i did the best that i could. i have come to realize cake making is not easily done w/a almost 4 year old around!
hopefully the royal icing coach will hold together tomorrow. i put the whole thing in the fridge and you're not supposed to refrigerate royal icing since the condensation will break it down, but we'll see if it will survive until mimi's bday party tomorrow!
after tomorrow, i must begin the cleaning out my junk room to make space for baby boy. no more excuses for putting it off!
